Classic Eggs Benedict with Hollandaise Sauce
A poached egg over a toasted English muffin, a slice of ham and topped with yellow Hollandaise sauce is a time-honoured brunch classic. This version of eggs benedict includes ham, but you can customize yours with smoked salmon and greens, or go luxe with a steamed lobster topper. Quick Quiche
This Tomato Quiche with Bacon & Goat’s Cheese recipe offers a few handy shortcuts: It uses a Compliments pre-made pie shell, can be made ahead, refrigerated and warmed through before serving so you’re not scrambling (literally) on the day of your brunch, and it’s ready in under an hour from start to finish. Serve with a crisp green salad and you’re set!

Gingerbread Waffles
Mix up the batter the night before for these delicious Gingerbread Waffles, bring to room temperature when you’re ready to make them and waffle iron your way to brunch nirvana. Warming spices and fancy molasses make these extra special.

Leftover croissants get a new life in this sumptuous, easy-to-make strata studded with frozen berries. Just measure, mix, assemble, bake, and serve hot from the oven. You’re welcome!
No-bake Panettone Dessert
This super simple assembly-only recipe requires no oven and just a few steps to get you from bought panettone to “wow!” dessert. Start by removing the paper liner and, using a serrated knife, cutting the panettone horizontally into thick slices. Spread a layer of your favourite jam and freshly whipped sweetened cream (or mascarpone) and top by rotating the slices to create a Christmas-tree look. If you want to dress it up, decorate the tips with fresh raspberries and finish with sprinkled icing sugar for a snow-topped effect.
