Step 1
In a large bowl, mix together the ground beef, dried parsley, garlic powder, onion powder, paprika, salt and pepper. Divide into 5 equal portions. Mold the meat mixture onto the skewers in long sausage shapes, approx. 1 ½ in. (4 cm) in diameter and 8 in. (20 cm) long, leaving room on the end of each skewer for holding.
Step 2
If your BBQ grill tends to stick, brush canola oil on the koftas before grilling. BBQ the koftas on medium heat with lid closed. Open lid occasionally to turn them, until browned or lightly charred on all sides and internal temperature reaches 71°C (160°F), 8 to 10 min. Also, warm the pitas on the grill.
Step 3
Transfer the koftas and pitas to a serving platter alongside bowls of garnishes: tzatziki, spinach, tomatoes, cucumber, onion and dill. Invite diners to make their own koftas; spread tzatziki onto pitas, layer with spinach, slide koftas off skewers on top and dress with rest of garnishes. Enjoy!
