Directions
Step 1
Preheat clean, oiled grill to medium-high.
Step 2
Add carrot and daikon to a medium bowl. Set aside. Combine vinegar, water, sugar and salt in a small saucepan. Set over medium-high heat, stirring constantly, 1 min or until sugar is dissolved. Immediately pour over vegetables. Let stand, stirring occasionally, while preparing burgers.
Step 3
Combine mayonnaise with hot chili sauce and lime juice in a small bowl. Cover with plastic wrap and refrigerate.
Step 4
Grill burger patties from frozen, with the lid closed, 5 to 7 min per side or until burgers reach an internal temperature of 71°C (160°F). Arrange cheese slices over burgers for the last 2 min of cooking to melt.
Step 5
Toast buns on the grill, if desired. Smear bottom of buns with hot chili mayo, then top each with 1 burger patty. Top with pickled vegetables, cucumber and cilantro sprigs. Smear top buns with more hot chili mayo and sandwich. Serve immediately.
