Directions

Step 1

Place the steak in a dish just big enough to hold it flat. In a small bowl, make the marinade by whisking together the lime juice, miso paste, sugar, half the garlic, hot sauce and soy sauce until smooth. Pour half the marinade over the steak (reserve the other half for glazing during grilling), rubbing onto all sides. Cover and chill at least 30 min. (Tip: Can also marinate overnight.)

Step 2

Set a medium to large cast-iron pan on the grill directly over a burner while preheating BBQ to medium-high heat -- about 200°C (400°F) -- with the lid closed. Being careful of the hot handle, use a heatproof spatula to spread the oil in the pan. Stir in the mushrooms, remaining garlic and half the salt and pepper. Cook with the lid closed, stirring occasionally, until mushrooms are lightly caramelized and just tender, about 15 min. Sprinkle on sesame seeds; briefly toasting them in the hot pan. Using BBQ gloves, transfer the pan to a heatproof surface or trivet (keep BBQ on).

Step 3

Place the marinated steak over direct heat on the BBQ (discard leftover marinade in dish). Grill, turning occasionally, to preferred doneness. Brush with the reserved marinade near the end of grilling. Transfer steak to cutting board to rest about 5 min.

Step 4

To serve, thinly slice steak against the grain; fan on platter. Season with remaining salt and pepper. Spoon mushrooms alongside and garnish with chives.
