Jalapeños’ medium heat gives warmth without overwhelming a dish. Try them in stir-fries and sauces or smoke them on the barbecue for homemade chipotle.
How to de-seed: Wash jalapeños well under cold water. Using a knife, cut the stem off the top, then slice lengthwise, tip to tip. Scrape the seeds out with a spoon. For extra protection, wear gloves to avoid heat of oil and seeds from coming into direct contact with your hands.
